Tomato Florentine Soup
This tasty soup is perfect for the upcoming chilly weather. It's simple and delicious.

- Tomato Sauce (you can always roast tomatoes and blend them to make your own sauce)
- Chicken Broth
- Chopped Garlic
- Chopped Onion
- Olive Oil
- Pesto (1 tablespoon)
- Pasta
- Spinach
- Basil
- Salt & Pepper
- Italian Seasoning
- Sugar (less than half a teaspoon to cut the acidic taste)
Saute the garlic and onion in olive oil in soup pot. Add the tomato sauce, chicken broth, pesto, salt, pepper, basil and Italian seasonings into soup pot. Allow soup to simmer for 20-30 minutes. Taste soup at this point to adjust any seasonings. Add a very small amount of sugar (less than half a teaspoon for a large soup pot) to cut the acidic taste. Add spinach. Allow soup to simmer for another 20 minutes and add the pasta in last. The soup will cook the pasta. Serve with side salad or a grilled cheese for a delicious meal.
