Chickpea Salad Sandwich (Vegan)
Ingredients:
1. Chickpeas
2. Vegan Mayo
3. Shredded Carrots
4. Red Onion
5. Dill Relish
5. Yellow Mustard
Directions:
I used organic canned chickpeas in this recipe. If you used the dried "in a bag" version; make sure you soak overnight in water.
Rinse chickpeas in a stainer. Place chickpeas in in a mixing bowl. Use a potato masher to mash the chickpeas. You can use a fork but you will get biceps by the time you are done. (It doesn't need to be perfectly mashed.) Add in shredded carrots, chopped red onion, and dill relish. Mix in equal parts yellow mustard and vegan mayo.
Super easy. Super vegan. Super fine.
