Italian Meatball Soup
Ingredients:
- Meatballs (1/4 of the package)
- Chicken broth (32 ounces)
- Tomato sauce (15 ounces)
- Chopped green bell pepper (half a bell pepper)
- Chopped onion (1/4 cup)
- Minced garlic (1 tablespoon)
- Spinach (half a frozen bag)
- Kidney beans (1 cup)
- Italian seasoning
- Salt & Pepper
- Red chili flakes
- Garlic powder
In a large soup pot, saute garlic, bell pepper, and onion.
Add chicken broth and tomato sauce and stir to get to desired soup consistency. Add remaining ingredients. Season to taste. Allow the soup to simmer for about 30 minutes. Taste the soup again after simmering. Serve with some bread or crackers :)
