Italian Meatball Soup



 It's cozy soup season! This soup is super easy and you can pretty much use whatever you have in the fridge. This is a one pot meal and the ingredients can be found in the freezer section of your grocery store. The ingredients are added to taste and vary based on the size of your pot so I didn't list exact measurements.


Ingredients:


  1. Meatballs (1/4 of the package)
  2.  Chicken broth (32 ounces)
  3. Tomato sauce (15 ounces)
  4. Chopped green bell pepper (half a bell pepper)
  5. Chopped onion (1/4 cup)
  6. Minced garlic (1 tablespoon)
  7. Spinach (half a frozen bag)
  8. Kidney beans (1 cup)
  9. Italian seasoning
  10. Salt & Pepper
  11. Red chili flakes
  12. Garlic powder

In a large soup pot, saute garlic, bell pepper, and onion. 



Add chicken broth and tomato sauce and stir to get to desired soup consistency. Add remaining ingredients. Season to taste. Allow the soup to simmer for about 30 minutes. Taste the soup again after simmering. Serve with some bread or crackers :)
