Stuffed Veggies (Vegan)


The little stuffed tomato held it's own against the bell peppers. Bomb dot com.

Ingredients:

1. Cooked Rice
2. Beyond Meat Vegan patty
3. Chopped Red Onion
4. Chopped Garlic

Seasonings:
1. Seasoned Salt
2. Garlic Powder
3. Black Pepper
4. Cayenne Pepper
5. Vegan or non-dairy butter substitute

Directions:
Heat the oven at 400 F. Put the cut up bell peppers on a baking/roasting tray. Roast until half way cooked. Saute the ingredients and seasonings in a pan. Cut the tomato's top off and scoop out the insides with a spoon. Put the rice mixture in the bell pepper and tomato. Continue to bake in the oven. I added sautéed broccolini to the plate for some greens.
